Nobody is a default username so you can run services under that user.
Such as run FTP as nobody.. or Apache web server as nobody..
this just helps you on a new system to run services as a non privileged user.
You would never want to run a service as Root.
You can create your own users, like nfsuser , apache, proftpd or vsftpd users so you can run those services as that.
It makes it easier to track down what things are doing what on a unix/linux system
